- 1650s, "framework for grilling meat, fish, etc.," from American Spanish barbacoa, from Arawakan (Haiti) barbakoa "framework of sticks," the raised wooden structure the Indians used to either sleep on or cure meat. - chocolate (n.)
- c. 1600, from Nahuatl (Aztecan) xocolatl, possibly from xocolia "to make bitter" + atl "water." Brought to Spain by 1520, from thence to the rest of Europe. Originally a drink; as a paste or cake made of ground, roasted, sweetened cacao seeds, 1640s.

As a color from 1776. Chocolate chip is from 1940; chocolatier is attested from 1888.

- Old English coc, from Vulgar Latin cocus "cook," from Latin coquus, from coquere "to cook, prepare food, ripen, digest, turn over in the mind" from PIE root *pekw- "to cook" (cognates: Oscan popina "kitchen," Sanskrit pakvah "cooked," Greek peptein, Lithuanian kepti "to bake, roast," Old Church Slavonic pecenu "roasted," Welsh poeth "cooked, baked, hot"). Germanic languages had no one native term for all types of cooking, and borrowed the Latin word (Old Saxon kok, Old High German choh, German Koch, Swedish kock).

- sandwich made from roasted lamb, 1971, originally the meat itself, as roasted on a rotating spit, from Modern Greek gyros "a circle" (see gyre (n.)). Mistaken in English for a plural and shorn of its -s.

- "pieces of meat roasted on a skewer," 1813 (compare shish kebab).
- rasher (n.)
- "thin slice of bacon or ham," 1590s, of unknown origin. Perhaps from Middle English rash "to cut," variant of rase "to rub, scrape out, erase." However, early lexicographer John Minsheu explained it in 1627 as a piece "rashly or hastily roasted."

- late 13c., "to cook by dry heat," from Old French rostir "to roast, burn" (Modern French rôtir), from Frankish *hraustjan (cognate with Old High German rosten, German rösten, Middle Dutch roosten "to roast"), originally "cook on a grate or gridiron," related to Germanic words meaning "gridiron, grate;" such as German Rost, Middle Dutch roost.
Intransitive sense "be very hot, be exposed to great heat" is from c. 1300. The meaning "make fun of in an affectionate way" is from 1710. From the same source as roster. Related: Roasted; roasting. Roast beef first recorded 1630s (French rosbif is from English).

- rotisserie (n.)
- 1868, "restaurant where meat is roasted on a spit," from French rôtisserie "shop selling cooked food, restaurant," from present participle stem of rôtir "to roast," from Old French rostir (see roast (v.)). As an in-home cooking apparatus, attested from 1953. Manufacturers (or their copy writers) back-formed a verb, rotiss (1958). Rotisserie league (1980), a form of fantasy baseball, is based on La Rotisserie, the Manhattan restaurant where it was conceived.

- c. 1200, "action of rotating," from Anglo-French tourn (Old French torn, tour), from Latin tornus "turning lathe;" also partly from turn (v.). Meaning "an act of turning, a single revolution or part of a revolution" is attested from late 15c. Sense of "place of bending" (in a road, river, etc.) is recorded from early 15c. Meaning "beginning of a period of time" is attested from 1853 (as in turn-of-the-century, from 1921 as an adjectival phrase).
Sense of "act of good will" is recorded from c. 1300. Meaning "spell of work" is from late 14c.; that of "an individual's time for action, when these go around in succession" is recorded from late 14c. The automatic automobile turn-signal is from 1915. Turn-sick "dizzy," is attested from early 15c. Phrase done to a turn (1780) suggests meat roasted on a spit. The turn of the screw (1796) is the additional twist to tighten its hold, sometimes with reference to torture by thumbscrews. - brochette
